  5.          1981 WORLD CHAMPIONSHIP BUTTERFIELD STAGELINE CHILI

  8. 4       medium onions, minced
  9. 10 lbs  lean beef brisket, finely chopped
  10. 1/4 c   oil
  11. 1 1/2   cloves garlic, minced
  12. 2 lbs   ground pork
  13. 1 can   (7oz) whole green chiles, minced
  14. 1 can   (15oz) tomato sauce
  15. 1 lb    whole tomatoes, finely chopped
  16. 1 T     cumin
  17. 1 t     salt
  18. 1 t     oregano
  19. 1 T     dry mustard
  20. 1 oz    tequila
  21. 1       can beer
  22. 2 jar   (3oz) chili powder
  23. 2       beef bouillon cubes
  24.  
  25. Brown onions, and beef in oil. Stir in garlic, pork, chiles, cumin,
  26. oregano, salt, dry mustard, tomato sauce, tomatoes, tequila, beer,
  27. chili powder and bouillon cubes.

  29. Bring to boil, then reduce heat and simmer 2-3 hours. Stir
  30. occasionally.  Do not stir the last 30 min before serving.
